Pho Bo noodle soup is more than just a dish for the Vietnamese. It is the signature culinary dish and the symbol of Vietnam. This seemingly simple soup has a rich history that combines the vast tapestry of flavors and traditions of the country.

One can now enjoy Pho Bo prepared by Vietnamese chefs at PhoBo restaurant which opened at 71 Hanrapetutyan Street in Yerevan.
In an interview with GastroVino, PhoBo Marketing Manager Aleta Serobyan talked about the restaurant’s concept, the menu, and the work of Vietnamese chefs.
PhoBo has its own concept
PhoBo is a restaurant specializing in Vietnamese cuisine, and a Russian franchise. It is represented not only in Russia, but also in England and Dubai. The idea of opening the PhoBo restaurant in Yerevan has existed for a long time, but was delayed for various reasons. Finally, by an interesting coincidence, the restaurant opened in Yerevan on December 12, 2024, the International “Pho Day”.

The chefs are from Vietnam, which allows us the confidence to say that here you can taste the most unique and authentic Vietnamese recipe of Pho Bo. The chefs’ assistants are Armenians.
Many of the ingredients of the dishes prepared in the restaurant - noodles, herbs and sauces - are supplied from Vietnam.

Pho Bo is a fast food, self-service restaurant. We try to be as close to the logic of the Vietnamese “street food” as possible. Vietnam is very famous for its variety of “street food” offering simple and healthy food.
12-hour broth soup
Pho Bo is the most famous and signature soup of Vietnam. If we try to draw parallels, then it is as important for the Vietnamese as dolma is for us.

The peculiarity of the soup is that the time required to simmer the broth can take up to 12 hours, after which it becomes transparent. Then the other ingredients are added: slices of meat, rice noodles, fresh herbs. It can also be seasoned with lemon and other Vietnamese herbs.

In addition to the classic Pho, one can also enjoy the roasted beef and chicken soup at the restaurant. Soup Pho with roasted beef is called Pho Tai Lan, and the Soup Pho with chicken is called Pho Ga.

Pho is served in 800-milliliter bowls, which is a pretty good serving size. We have already sold about 1,620 liters of Pho soup in a month.
Noodles, baos and spring rolls
Besides Pho, one can also try other soups at the restaurant: Bun Tom and Tom Yum. Tom Yum is a Thai soup with seafood, served with rice. Bun Tom is a soup with shrimp, rice noodle and herbs, and the main ingredients are noodles and herbs.
Hot dishes at PhoBo are not limited to soups. There is the Com Rang with fried rice and vegetables on the menu, Pho Xao with roast vermicelli, vegetables and egg, and Mien Xao with “glass” noodles. All these dishes can be served with chicken, seafood or beef, depending on the customers’ preferences.

Appetizers include the famous Asian Nem, pancakes, baos, and spring rolls. The peculiarity of Vietnamese spring rolls is that they are filled with mango and shrimp and are served with a sweet and sour sauce.

Customers with a sweet tooth can try banana tempura with peanuts, coconut flakes and caramel sauce, and sweet bao with mango cream. As for the Vietnamese coffee, it is served with condensed milk.
As close as possible to Vietnamese culture
PhoBo showcases the authentic Vietnamese cuisine at its best, seeking to introduce its guests to Vietnamese culture and bring them as close to it as possible.
